ULTIMATE Keto Vegan Flatbread

Where are my pizza lovers at?! Pizza cravings are REAL in our household. Not many weekends go by when I haven't ordered at least one pizza from a local food spot. However, after switching to a whole foods lifestyle, this can be challenging! This is why we created our KETO Flatbreads - these babies are gluten-free, vegan, non-GMO and only 4g of NET carbs for the whole dang thing.

Although I love cheese as much as the next person, I try to cut it from my diet as much as possible due to the bloating, constipation and headaches it often causes me. This flatbread recipe I am going to share with you is 100% vegan, keto and gluten-free. Unless you have an allergy to cashews, coconut or almonds, you are likely going to find that this recipe suits your diet and your tastebuds!

First things first, you will have to make your vegan parmesan cheese. This cheese is low carb, easy to make, and between its texture and garlic/nutty flavour, it tastes like the real deal. You can use any blender, as long as you can pulse the blades so that you don't puree the cheese! You can store in an airtight container for upwards of 1 month in the refrigerator. I use this cheese on everything - salads, potatoes, pasta, pizza, you name it! It is a staple in our fridge.


Okay now we can get to the Flatbread recipe! After you have made your cheese you are ready to go. Think of this recipe as a guideline - you can add any veggies or meat/meat substitute that you love (roasted Brussels are amazing and not included in this recipe!). I top my veggie pizzas with some fresh arugula to give a peppery zest, but it is definitely not necessary. I also topped this pizza with our Vegan Chipotle sauce, but it is not necessary either. The post-bake toppings are simply extra!
